While slow-cooked soup (or bone broth) is typical in my family’s everyday dinner, this particular soup is not. Double-boiled black chicken soup is seen more as medicinal dish than everyday food.

I haven’t had this for a while until two weeks ago; my brother’s girlfriend just recovered from dengue and we made this nutritious chicken soup for her. “Let food be thy medicine, and let medicine be thy food”, a quote commonly attributed to Hippocrates, is what my family practices.


BLACK CHICKEN

Now, why is the chicken black? What’s so good about it?

Well, it’s a different species of chicken. The Chinese believe that black chicken is more nutritious than regular chicken and sold at a higher price.

According to my friend who sells black chicken, it has higher levels of irons, minerals, vitamins & nutrients than regular chicken.

Black chicken is generally used to make double-boiled soup.


CHINESE HERBS

There is a long list of common Chinese herbs. In my fridge alone, I found more than 25 and translated them all to English here. Each of them has specific medicinal values. For this soup, we use:

  • American Ginseng
  • Wolfberries/ goji berries
  • Solomon’s Seal

I would say that the star is American Ginseng. It’s used to strengthen the body by increasing our qi (energy). Sometimes I pop it into my mouth and eat it like that.

On top of that, we also added goji berries and solomon’s seal. They are mainly known to be good for the eyes and help moisten our skin, respectively.

Black Chicken Herbal Soup with American Ginseng

Ingredients
  • 500 g (~1/2) Black chicken
  • 750 ml (3 cups) Water
  • 30 g American ginseng
  • 12 g Goji berries
  • 12 g Solomon Seal
  • 1/2 teaspoon Sea salt
Directions
  • Step 1 BLANCH CHICKEN: Clean chicken, put in a pot of water, and bring to a boil. Blanch for a few minutes. This is when you see scum coming out of the chicken. Remove the chicken and
  • Step 2 PUT ALL THE INGREDIENTS INTO THE INNER POT: Put the chicken, water, and herbs (American ginseng, goji berries, and Solomon’s seal) into the pot. Cover.
  • Step 3 SLOW-COOK: Put the pot into the slow-cooker and the slow-cooker with water until half of the inner pot is submerged. Cook on ‘HIGH’ for 4 hours.
  • Step 4 SEASON: Season with salt and serve hot.

SHORT RECIPE

Blanch 500 g chicken in hot water. Place cleaned chicken + 30 g of American ginseng + 12 g of solomon’s seal + 12 g of wolfberries + 3 cups of water into a pot with lid. Put the pot into a slow-cooker. Fill the slow-cooker with water until it covers half the pot. Cook on ‘HIGH’ for 4 hours.


TIPS

  1. Instapot, electric steamer, or stove. If you don’t have a slow-cooker, you can do it in an Instapot or an electric steamer too.
  2. Use a ceramic inner pot, or any pot that you have with a lid that can be fit into a bigger pot Traditionally, a ceramic inner pot is used to make this soup. Although we have that also, we prefer to use our stainless steel Zebra pot; it’s much more convenient. Even if you can’t finish the soup, you can keep in the fridge and immediately heat it on an induction cooker/stove directly.

Despite this being a ‘medicinal’ soup, it tastes delicious! After learning all about its benefits and realising how easy it is to make it,  I’m thinking of making this monthly since I’ve been overworking recently and need a boost of energy.

My sister is getting married soon and she's been eating healthy and other beauty food to prepare for her big day. Since we were little, our mother make for us Chinese beauty food supposedly makes us beautiful. A few of them are bird nest soup, hasma soup, Eight Treasure Tonic, Red Dates Tonic, and other herbal soups.

This time, when my sister requested for a collagen-rich dessert, she made a simple but delicious dessert with peach gum or known as 'tou gau/桃胶' in Cantonese. I like that this is not overly sweet.

 


BENEFITS OF PEACH GUM

For someone who like chewy jelly-like texture like konnyaku jelly, I love eating peach gum which is believed to be a source of collagen. I have yet to do a detail research on the gum, but a quick google search shows that:

Peach gum is the resin from peach and Chinese wild peach trees, already solidified when it is found. As detailed in classical Chinese medical literature, its curative qualities include solving urinal infections, thirst-quenching and relieving stress.

Not only used frequently by doctors of Traditional Chinese Medicine, peach gum is also a natural and healthy food rich in amino acid, which allows collagen to be quickly absorbed into the human body. (Source: Michelin Guide)

Peach gum is believe to have beauty benefits like bird nest...but much more affordable. While I don't know how much of this truly helps (as in I can't find scientific explanations yet), I know from experience that a lot of my Mom's wisdom passed on from our ancestors did help me.

Besides what can I lose from eating something natural and plant-base (not bird's saliva) like peach gum? So yes, I am going to continue enjoying this dessert and hopefully reap its purported beauty benefits.


3 MAIN INGREDIENTS

While I do like to cook, sometimes difficult recipes with a long list of ingredients overwhelms even a cooking instructor/food consultant like me. So I came up with a list of recipes using 5 ingredients and less. This is one of them.

You will only need three ingredients:

  • Peach Gum
  • Honey Dates
  • Red Dates


TOOLS

  • Pot/ slow-cooker
  • Mixing bowl (to soak the peach resin)

RECIPE CARD

Peach Gum & Dates Soup Dessert (3 Ingredients)

  • Peach Resin - 50 g (about 1/2 cup)
  • Red dates - 60 g (about 20 medium-sized pieces)
  • Honey dates - 120 g (about 6 pieces)
  • Water - 1.5 L
Directions
  • Step 1 Soak peach gum in water overnight or until they expand and soften
  • Step 2 Remove the hard black bits from the peach resin (those are barks)
  • Step 3 Put honey dates, red dates, and water in a slow cooker. Boil on LOW for 8 hours, or HIGH for 4 hours.
  • Step 4 Remove dates from the cooker
  • Step 5 Then add in peach resin. Let it cook for another 25 minutes.


SHORT RECIPE

Soak 1/2 cup of peach gum in water. When soften, remove the hard black bits from it. Put in a slow cooker: 20 pcs red dates + 6 pieces honey dates + 1.5 L of water. Boil on LOW for 8 hours/ HIGH for 4 hours. Remove dates, add in peach resin. Cook for another 25 minutes.

STEP-BY-STEP

1. Soak peach gum in water overnight or until they expand and soften

2. Remove the hard black bits from the peach resin (those are barks)

3. Put honey dates, red dates, and water in a slow cooker. Boil on LOW for 8 hours, or HIGH for 4 hours.
4. Remove dates from the cooker

5. Then add in peach resin. Let it cook for another 15 minutes.

6. Serve hot or chilled


COOKING NOTES

  1. Cook in a slow-cooker overnightI  like making this in the slow-cooker right before going to bed. So by morning, the dates would have been slow-boiled for 8 hours.
  2. Use a steam oven If you have a steam oven (I have a Panasonic one),  you can also steam it for 3 hours. Head over to this video to see how I did it
  3. If cooking in a pot, bring 2 litres of water and dates to boil then simmer for 1 hour with lid closed (or longer depending on how concentrated you want it to be)
  4. Add more red dates and honey dates to make it sweeter My family doesn't like food to be too sweet. If it's not sweet enough for you, you can add more red dates, honey dates, or even rock sugar.
  5. Buy peach gum at Chinese medicinal shop. I found it online too at Lazada/ Shopee by the name of  Tao Jiao, Peach Resin, and Peach Gum. 

This is one of the easiest and most delicious beauty food that I enjoy drinking. Try it!

My family makes slow-cooked Chinese soup almost everyday. At Chinese New Year reunion dinner, it is no exception. In fact, it has to be a lot more luxurious than usual. Our go-to Chinese New Year soup is Fish Maw Soup with Cabbage and Scallops.

Luxurious yet affordable ingredients

This time around, I've worked with Chai Huat Hin, an almost 50 years old dried seafood store located at Petaling Street, to create an even more luxurious (yet affordable) soup for their Chinese New Year campaign.

I was shown the different grades of fish maw and dried scallops that are available, and played with other interesting ingredients like conch meat. After a few round of experiment in the kitchen, I finally came up with the perfect soup that taste and look like those in high-end Chinese restaurants.

I used chicken with bones and lean pork meat. A combination of meat makes the soup tastier; each of them provides a different kind of flavour.

I also learned to choose good quality ingredients:  fish maw, conch meat, and Hokkaido dried scallops. These ingredients are more intense in flavour than lower grade ones.

Slow-cooker makes good quality soup

The main reason for using a slow-cooker in this recipe is to retain the taste, nutrient, and texture. When you use such good quality ingredients, you don't want to boil the soup on high heat in.

Boiling on sustained lower heat without too much of bubbling ensure that the ingredients stay intact. By the end of 6 hours, you will still get a whole cooked scallop and a whole piece of melt-in-mouth fish maw (Be gentle with it though!)

Cooking the soup in the slow cooker also extracts all the goodness (including the collagen) from the bones. (Read: How bone broth keeps you young)

If you have a steam oven, you can even double-boil this soup. But the most common appliance in a Chinese household is the slow-cooker and this is what I used for this recipe. Enjoy!

  • 80 g Fish Maw
  • 6 pieces of Japanese scallop
  • 1/2 piece (30 g) conch meat
  • 2 pieces (750 g) chicken legs, blanched
  • 1 piece (300 g) of lean pork, blanched
  • 1 tablespoon Goji berry
  • 2 L (8 cups) of water
Directions
  • Step 1 SOAK FISH MAW: Soak fish maw in water for 12 hours or overnight. It is ready when the middle is soft. If not, soak for a few more hours.
  • Step 2 BOIL FISH MAW: Then use some ginger slices to boil it for about 15 minutes to remove any fishy odour.
  • Step 3 COOK IN THE SLOW-COOKER: Place fish maw, conch, scallop, chicken, and water in the slow cooker. Cook on HIGH for 1 hour. Then cook on LOW for another 5 hours.
  • Step 4 SEASON: 10 minutes before serving, add goji berries and season with salt.
  • Step 5 SERVE: Cut fish maw into 6 pieces. Place fish maw and scallop into each bowl and top with goji berries.


SHORT RECIPE

Blanch chicken and pork. Soak 80 g of fish maw until soften. Boil fish maw with ginger slices.  Put fish maw + conch + scallop + chicken + pork + water into the slow cooker. Cook on HIGH for 1 hours, then low for 5 hours. 10 mins before serving add 1 tbsp goji berries + salt. Cut fish maw and conch into 6 pieces. Divide ingredients evenly into 6 bowls.


COOKING TIPS

  1. Soak fish maw overnight. The thicker the fish maw, the longer you will need to soak it. The general rule is soaking it overnight (about 12 hours). Then check if its soft enough by pressing it with your fingers. If its still hard, soak for a while more until the whole fish maw is properly rehydrated.
  2. Boil fish maw in ginger. I used to skip this step. However, speaking to experts in Chai Huat Hin and to a grandaunt who used to own a Chinese restaurant made me realise the importance. Boiling the fish maw in ginger slices will help remove its fishy odour, leaving only pleasant marine taste.
  3. Go easy on the conch Conch meat (lo pin/螺肉). A small amount of conch meat enhances the soup. However, do not put too much as it can give a fishy odour (腥味).
  4. Prepare at lunch time, and enjoy at dinner This soup takes about 6 hours to boil. Make it during lunch time so that by dinner you'll have a pot of slow-boiled soup for reunion dinner
  5. Buy the ingredients way ahead of time As all the ingredients can be kept for a long time, get the ingredients as soon as possible to avoid the last minute Chinese New Year crowd. To save time and hassle, order them online and have them delivered to you.

There are many different Chinese herbal blends to treat specific health concern. When someone in my family lacks appetite, we'll make Sei San Tong (Four Spirit Soup 四神湯); when a major exam is near and we need extra brainpower, we'll make Ming Muk Bou Lou Tong (明目補㺁湯) which translates to Soup for Improving Eyesight and Brain.

An important ingredient in this herbal blend is walnut. Walnut, shaped like the brain, is believed to enhance mental capacity. My mother used to boil this for me and my siblings right before school exams. I think most people need to drink this more than ever; we look at the screen and think too much. So nowadays, we boil it occasionally for its taste and medicinal value.

Looking at the herbs, many commonly used in Chinese dessert, and which is not known to be as potent as other herbs like ginseng, I asked why this is especially good for the brain. I was told that in Chinese medicine, it is not the benefit of one herb that counts; rather it is the combination that makes it more potent than the sum of each ingredient.

For convenience, this blend is available in herbal packets. We get this particular combo from a very old Chinese herbal medicine shop in Petaling Street, Kuala Lumpur's Chinatown. However, since my family buys all the common herbs separately, we normally put them together ourselves.

  • 750 g Chicken bones and meat
  • 24 g Walnuts (hup toh 核桃)
  • 8 g Snow fungus (shuet yu 雪耳)
  • 4 pieces Dried figs (mo fa kor 无花果)
  • 6 g Prinsepia uniflora (loi yan yuk 内人肉)
  • 8 g Lily bulbs (pak hup 百合)
  • 24 g Lotus seed (lin zhi 莲子)
  • 1 piece Honey dates (mat zhou 蜜枣)
  • 2 L water
  • Fine sea salt to taste (suggestion: 1 tsp)
Directions
  • Step 1 PREP: Rinse herbs in a bowl of water. Soak snow fungus and tear into pieces.
  • Step 2 BLANCH CHICKEN: Place chicken into a wok. Fill in with water until chicken is fully submerged. Turn on stove on high heat. Let it blanch (5 mins). Rinse chicken.
  • Step 3 COOK: Place rinsed herbs, blanched chicken, and 2 L of water into the slow cooker. Turn on 'auto' and let it boil for 4 - 6 hours. If you're boiling with a pot, add more water.
  • Step 4 SEASON: Season with fine sea salt before serving.

SHORT RECIPE

Blanch 750 g chicken bones and meat. Rinse herbs (24 g walnuts + 8 g snow fungus + 1 honey date + 4 pcs dried figs + 24 g lotus seed + 8 g lily bulbs + 6 g princspeia uniflora). Boil chicken + herbs + 2 L water in a slow-cooker for 4 - 6 hrs. Season with sea salt.


STEP-BY-STEP

1. PREP: Rinse herbs in a bowl of water. Soak snow fungus.

2. BLANCH CHICKEN: Place chicken into a wok. Fill in with water until chicken is fully submerged. Turn on stove on high heat. Let it blanch (5 mins). Rinse chicken under running water.

3. BOIL IN THE SLOW-COOKER: Place rinsed herbs, blanched chicken, and 2 L of water into the slow-cooker. Turn on 'auto' and let it boil for 4 - 6 hours. If you're boiling with a pot, add more water.

4. SEASON: Season with fine sea salt before serving


COOKING TIPS

  1. Buy prepacked herbal packets For convenience, I keep prepacked Chinese herbs in the fridge. As my family is big on consuming herbal soup and tonic, we normally buy separate herbs and put together different herbal blends ourselves. It's more flexible and economical this way.
  2. Use a slow cooker or a thermal cooker My family has the habit of slow-cooking our soup in the morning and enjoy a slow-cooked soup for dinner. I'm also a big proponent of slow-boiled bone broth for health and beauty How bone broth keeps us looking young
  3. Keep frozen blanched chicken. You can blanched few chickens bones and separate into portions to freeze. So the next few times you boil soup, you can skip one step.

Even if you love Chinese soup, you may not heard of this ‘pang pi dou tang’ (彭皮豆湯). Hyacinth beans or Egyptian Kidney Beans, also known as pang pei dau in Cantonese, is not easily available.

Ingredients Information: Hyacinth Bean

Unlike commercialised vegetables such as long beans or spinach, I’ve never seen this bean at the supermarket (despite frequenting many different supermarkets due to my job as a food writer/recipe developer). It is occasionally seen at the wet market, but even so it is extremely rare. My family gets our supplies from our friend’s garden.

Hyacinth bean is a popular among the Indian community. It is used to making dhal and curries. In my family, we use it exclusively for soup. The flat green-beans gives a pleasant savoury-sweet flavour. Normally, we’ll make a huge pot of it and keep the leftover for another day – it tastes even better on the second day!

  • 350 g hyacinth beans
  • 25 g (3 x 1.5 in) ‘Big head’ Preserved Vegetable
  • 500 g chicken bones
  • 10 pcs red dates
  • 1/2 pc (20 g) dried squid
  • 1 tbsp goji berries
  • 2.5 L water
Directions
  • Step 1 BLANCH BONES: Add bones in a pot of room temperature water. Bring to a boil. Remove scum with a sieve.
  • Step 2 PREP: Snip both end of beans. Using a scissors, snip squid into 1 cm pieces. Chop preserved vegetables into 1 cm slices.
  • Step 3 COOK: Add all the ingredients into the slow cooker. Cook on high for a minimum of 3 hours or low for 6 hours. If using a pot, bring to a boil and then simmer for 3 hours.

Blanch 800 g of chicken bones. Add chicken bones + 350 g hyacinth beans + 25 g preserved vegetable + 10 red dates + 1/2 pcs dried squid + 1 tbsp goji berries + 2.5 L of water into the slow cooker. Cook on high for 3 hours.

Pat Chan Soup (八珍汤) was the punishment to puberty. My mother forced me to drink this super bitter medicinal soup at the end of every menstrual cycle. It was a monthly torture.

I hated it so much that I secretly throw away the bowl of soup. Once, I was caught in the act. She was furious and refused to boil it for my again. I was elated...though not for long. I could feel a dip in energy after every menstrual cycle that I begged my mother to make if for me again.

Despite my distaste for it, I had to admit that it is good for me. Until now, my period is always regular and I never had much pain. Whenever I feel tired despite having enough sleep, I'll make this soup or red dates tonic to strengthen my body.

In the recent years, my family found a Chinese herbal shop which sells a formula that taste palatable. On top of that, we added more black dates, and honey dates to make it sweeter. This is the best tasting Ba Zhen formula that I've tasted (as best as this bitter soup can be anyway).


Medicinal values & beauty benefits

This medicinal soup helps one regain strength and stamina. Formulated specifically to combat what Traditional Chinese Medicine refer to as 'Blood and Qi deficiency', it helps improves pale complexion, shortness of breath, and irregular or painful menstruation.

This medicinal soup is not only given to women after menstruation, but to patients after surgeries. It contains:

  • Chinese Angelica Root - Gui Shen/ 归身
  • White Atrocytlodes rhizomes - Bai Zhu/ 白术
  • Rehmannia - Shu Di Huang/ 熟地黄
  • Eucommia bark - Du Zhong/ 杜仲
  • Codonopsis root - Dang Shen/ 党参
  • White peony root - Bai Shao/ 白芍
  • Poria - Fu Shen/ 茯神
  • Sichuan Lovage - Chuan Xiong/ 川芎

  • 10 g Chinese Angelica Root (Gui Shen/ 归身)
  • 18 g White Atrocytlodes rhizomes (Bai Zhu/ 白术)
  • 15 g Rehmannia (Shu Di Huang/ 熟地黄)
  • 15 g Eucommia bark (Du Zhong/ 杜仲)
  • 8 g Codonopsis root (Dang Shen/ 党参)
  • 16 g White peony root (Bai Shao/ 白芍)
  • 8 g Poria (Fu Shen/ 茯神)
  • 8 g Sichuan Lovage (Chuang Xiong/ 川芎)
  • 12 g Honey Fried Licorice Root (Zhi Gan Cao/ 炙甘草)
  • 8 pieces Black Dates
  • 1 piece Honey Dates
  • 1.2 L Water
Directions
  • Step 1 PREP: Rinse herbs.
  • Step 2 COOK:  Place water and herbs in a pot. Bring to boil and then simmer for 1 hour.


When to drink it?

This tonic is normally drank after menstruation is just over. Women in my family swear by this soup - they drink it not just after menstruation, but sometimes during and before it. It's viewed like a supplement more than a medicine.

I normally boil this in a pot before going to bed and leave it on the stove. In the morning, I'll reheat the soup until its lukewarm and drink it on empty stomach before having my breakfast. Traditional Chinese Medicine believes that drinking herbal remedies on an empty stomach is best for absorption.

However, this is a rather 'heaty' soup. So we normally not make it when the weather is too hot or drink too much of it. One or two bowls is quite enough.

Note: There are many variation to this herbal remedy. To make it less bitter, we normally add black dates, red dates, and honey dates. My family alternate between two formulas. This particular recipe is my personal favourite.
